We're hurling ourselves headfirst into spring — which has felt more frigid in NYC than we’d prefer. We’re thrilled about the days getting longer and the promise of warmer weather… don't let the door hit you on the way out, winter.

The new astrological year has us ready to come out of hibernation and celebrate. With that in mind, here’s a spicy play on a Penicillin cocktail that's fiery enough to ignite your taste buds (at the very least) and get you in the mood for a fresh, new season.

Aries Season:
Spicy Mezcal Penicillin

2 oz blended Scotch whiskey
3/4 oz hot honey ginger syrup
3/4 oz fresh lemon juice
1/4 oz mezcal

Combine Scotch, hot honey ginger syrup, and lemon juice in a shaker tin with ice. Shake and strain into a rocks glass filled with ice. Top with a mezcal float and garnish with candied ginger. Cheers!

Hot Honey Ginger Syrup

1/4 cup hot honey
1/4 cup hot water
1 inch thumb of fresh ginger, peeled

Combine ginger and hot water in a blender and blend until smooth. Carefully strain into hot honey and stir until combined. Alternatively, sub regular honey for hot honey and add cayenne pepper to taste. Makes enough syrup for 5 cocktails.
